VMWare installation converting physical workstations to VMs on Dell Zero clients

I am looking to hire a computer technician that is experienced in VDI solutions specifically VMWare. We are currently virtualizing a number of our workstations and would need assistance in doing so. Our current setup is as follows:
Hardware:
HP Proliant server hosting ESXi utilizing Nvidia GRID technology (2x GRID K2 VM Cards)
Dell Wyse zero clients
Software:
Windows 2008 R2
VMWare Horizion (currently temporary license, permanent license to follow 30 days)
The objective is to convert our local workstations to virtual ones. Our server already has ESXi 6.5 (VShpere) installed. We now must setup the workstations and get them operational via Dell Wyse 5030 zero clients which are located on our shop floor.
I was told from VMware I need the complete Horizon package and needed a separate server for the connection server even though I am only running one server. Do I need this? I want the simplest installation possible and do not want unnecessary software / extras.
Prospect must be familiar and have experience utilizing all hardware listed above and VMWare Horizon and virtualizing CAD workstations. The initial setup will be for 4 workstations with an additional 8 to follow. Prospect must also have experience using NVidia GRID or other such virtual specific graphics cards.
I am only slightly familiar with VDI and need assistance setting up this system. First it will be installed on a temporary “sandbox” Windows 2008 R2 server then done so permanently. I have already successfully setup the ESXi server and have one VM running on it but I don’t know how to get them working on the Dell Zero clients, have them working correctly with NVidia GRID and also to have everything tuned correctly for best performance.
I require step-by-step instructions and most assistance can be done via remote sessions if necessary. I need this to be accomplished immediately and immediate support 4pm-9pm (or later if necessary) Eastern Standard Time.
Payment will be made based on the following criteria:
ESXi server operational efficiently with no errors
Initial install may be required on temporary experimental server – I must be able to reinstall on permanent server
4 Dell zero clients running 4 CAD systems utilizing NVidia GRID
System must run efficiently and with no errors
Basic documentation for complete installation
Most installation can be achieved remotely but I must know each step of the process in order to replicate in the future.
