Microsoft Dynamics - Office 365. Design, Deploy and Maintain

I want to deploy Microsoft Dynamics for Office 365 for around 50 people.
I need someone experienced in building some customized fields, user security (who can see what) and generally making suggestions as to how best to make the deployment a success.
I think our optimum plan would be to get some kind of "model" up and running which we can refine and then role out to a wider audience.
