Need Server Manager to help with high traffic site migration and potential server management

I need to move a very high traffic website from Media Temple grid server to a brand new Linux server (D8-370: Quad Core [url removed, login to view] (E3-1230v2); 32GB RAM; 2 x 600GB 15K SAS + 240GB Cachecade; 1Gbps Unmetered) and get it live without any down time where possible.
The Media Temple server runs on cPanel so will be installing cPanel on the new server too for an easier migration.
We will need someone to manage the server if possible. Someone that is experienced in monitoring and optimising a site which gets between 1 - 1.8 Million hits per month and we are happy to pay a monthly set fee for that. Please quote us for the server migration and set up only and we can talk more about server management afterwards.
