Because this is a mathematics book, have you considered typesetting it in TeX/LaTeX. I can create a LaTeX template for your book and typeset it. I can certainly typeset your book in InDesign, however I do not recommend Word. Word is an editing software not a typesetting one. I can start working on it right away and I deliver a draft in one week. Once the draft is approved, first page proofs will follow shortly depending on the length of the book. Corrections will be extra.
